VEGGING AT THE SHORE

Visit a local farmers market this time of year and chances are that you will see Jersey peaches everywhere. Of all the local fruits I enjoy eating, peaches are probably my favorite. From July through August, I always have them ripening on my counter. In an ideal world, I would freeze them to enjoy all winter, but they just never last that long in my house.
While I love just biting into a sweet, juicy peach, there are plenty of other ways I enjoy them. Here are my favorites:
IN BAKED GOODS
Three years ago, my kids and I entered the Margate Farmers Market peach pie contest and we won second place. I can say with confidence that my peach pie recipe is out of this world good. Whenever I get invited to a barbecue or gathering over the summer, my peach pie is always requested. I also use peaches to make peach crisp and peach scones. The possibilities are endless.
If you love baking, consider entering a peach pie contest this summer. Margate Farmers Market is holding their contest on Thursday, July 20th and Brigantine Farmers Market is scheduled for Saturday, August 12th. Start perfecting your recipe.
GRILLED
If you have never grilled peaches before, now is the time to try it. Cut them in half, brush with a little bit of oil and grill them for just a couple of minutes until they get grill marks. Grilling them brings out their sweetness. Serve grilled peaches in a salad or as a dessert with vanilla ice cream.
IN OVERNIGHT OATS
Overnight oats is one of my favorite breakfast recipes. It’s so simple to make the night before and when you wake up, breakfast is ready. Did I mention how delicious it is? See below for the healthy recipe.
PEACH OVERNIGHT OATS
Ingredients:
- 1 cup milk (any kind)
- 1/2 cup old-fashioned oats
- 1 peach, chopped
- 1 teaspoon honey or other sweetener
- 1 teaspoon chia seeds
Directions:
Combine all ingredients in a mason jar. Stir with a spoon. Put tight fitting lid on and shake well. Place in refrigerator overnight and enjoy in the morning.
