Summer Heat and Your Appetite

In the summer heat, the last thing we feel like doing is prepping and eating a meal. The hot temperatures zap up all our energy. However, we need good nutrition to keep our energy going throughout our busy day. Snacking on the go is helpful when our appetite leaves us. Foods like chilled hard-boiled eggs, fruit smoothies, herb-infused water such as orange-basil water are good ideas to incorporate throughout the day.

It’s also imperative to drink water often. Drinking lots of water is a good way to cool down our internal body temperature. I suggest drinking half your body weight in ounces per day. Many foods also contain water to keep us hydrated in these warm summer months.

Here is a meatless recipe to enjoy all summer long! This recipe can be found in my cookbook Nancy’s Recipes for Life, which is available in my Linwood office location, and in Capellas Oil and Vinegar Store in Ocean City.

Feta and Spinach Casserole

Ingredients:

  • 3 egg whites
  • 1 large handful of organic baby spinach leaves
  • 1 large tomato, chopped
  • 1/4 cup of onions, chopped
  • 1/4 cup of crumbled feta cheese
  • Salt pepper to taste

Directions:

Chop onion and tomatoes. Spray pan with oil. Put in medium heat. Start with onions and cook till desired consistency. Just before you take it off the heat, take half of the feta cheese and melt it in a pan. Slide out onto a plate. Garnish with the other half of feta on top and salt and pepper to taste.
