Turkey Time of Year

It’s that time of year – Turkey this and Turkey that. Good news! The health benefits of this bird are many. Turkey is an excellent source of Vitamin B and niacin. Light skinless roasted Turkey is low in saturated fat and high in protein. It contains less fat than chicken, beef, and pork.

Stick to the white meat if you’re watching your fat intake. Bake, broil, or grill using broth, lemon, or orange juice if basting.

Sloppy Garden Joes

Ingredients

  • 1 onion, chopped
  • 1 carrot, chopped
  • 1/2 green pepper, chopped
  • 1 lb lean ground turkey
  • 1 ( 8oz) can tomato sauce
  • 1 ( 15 oz) can whole crushed tomatoes, crushed
  • 1(8oz) can of mushrooms
  • 1/4 cup low sugar bbq sauce
  • Pepper to taste
  • 8 whole-wheat buns

Directions

Sauté onions, carrots, green pepper, and ground turkey in a pan over medium-high heat for 5 minutes. Add to tomato sauce, crushed tomatoes, barbecue sauce, and seasonings and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Uncover and cook for an additional 3 minutes or until thick. Serve on toasted or plain buns.
