The Health Benefits Of Cabbage

The Brassica family of veggies includes broccoli, cabbage cauliflower, and kale. People love cabbage! Cabbage is loaded with nutrients and vitamins. It has a variety of colors  including red, purple, white, and green. Cabbage is included in dishes such as sauerkraut, kimchi, and coleslaw.

Cabbage also includes small amounts of micronutrients including Vitamin A, riboflavin, and iron. Cabbage contains high amounts of important fiber needed in our diets.

Cruciferous vegetables like cabbage contain antioxidants that help to reduce inflammation in the body. Vitamin C is so important for many important functions. Red cabbage is very high in this nutrient and provides 85% of the RDI per cup.

Cabbage contains insoluble fiber which keeps the digestive system healthy by providing fuel for friendly bacteria and promoting regular bowel movements.

Cabbage keeps blood pressure in a healthy range. Orange cabbage in particular, is potassium-rich, helping to lower high pressure. Cholesterol may also be lowered by eating cabbage.

Chicken And
Cabbage Stir Fry

  • 2 lbs. cabbage, shredded
  • 1 lb. onion, cut into strips
  • 1 lb. celery, chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp. Lite Soy Sauce
  • 2lb. Boneless skinless chicken breasts diced

Add 1/2 tablespoon extra virgin olive oil ( Capellas olive oil ) to a hot skillet and brown chicken. Add 1/4 cup lite soy sauce, stir, and remove from heat. When the chicken is about to be done, add half a tablespoon extra virgin olive oil to the hot pot ( large enough to hold all the veggies, they will cook down a bit ) Start with the onions and then add the rest of the veggies along with the remaining 1/4 lite soy sauce. Stirring frequently, cook to desired crispness. Remove from heat, add chicken, and stir. Serves 7.
