The Benefits of Slow-cooking

Slow-cooking can be a healthier way to prepare your meals. Slow-cooking does not compromise the integrity of essential nutrients in the foods. In fact, lowering the temperature may preserve nutrients better than when food is cooked rapidly on high heat.

The perks of slow-cooking extend beyond increasing the bioavailability of nutrients in plant foods. Slow-cooking has gained momentum as it enhances flavor, is kind to your pocketbook and requires minimal effort. Plus, of course, it offers a boost in nutrition!

Slow-cooking is arguably one of the safest ways to cook meat. Charred and grilled meats have been linked with inflammation, diabetes, heart disease and cancer.

Also, try to use lots of carrots and spinach in your recipes as these carry lutein, an antioxidant that helps fight eye disease. Another superstar ingredient is canned tomatoes. They offer tons of nutritional perks. The power of the tomato includes lycopene, which is linked to heart protection, cancer prevention and improved mood. Tomatoes can be used in soups and stews.

So the next time you find yourself wondering what’s for dinner, slow-cook your meal!

Slow-cooker Salsa Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 package of reduced sodium taco seasoning
  • 1 cup of salsa
  • 1 can of reduced fat cream mushroom soup (condensed)
  • 1 tablespoon of nonfat sour cream

Directions:

Add chicken to the slow cooker.

Sprinkle taco seasoning over chicken.

Pour salsa and soup over the chicken.

Cook on low for 6-8 hours.

Remove from heat and stir in sour cream.

Serve over rice.
