Summer Sips to Create & Enjoy

There is nothing quite as relaxing as kicking back by the pool on a hot summer day with a frozen cocktail in hand. As you make plans for summer BBQ’s and chilled-out afternoons, try one of these delicious frozen cocktails to keep you cool.

Triple Layer Piña Colada

This summer time dream from Delish features a delicious blend of refreshing fruits and coconut. It is a perfect way to cool off on a hot afternoon.

INGREDIENTS:

  • 3 oz. rum
  • 1 1/2 c. pineapple
  • 3 tsp. agave syrup
  • 3 tbsp. coconut cream
  • 3 oz. lime juice
  • 1 c. ice
  • 12 strawberries, chopped
  • 2 small peach, chopped
  • Strawberries, for garnish
  • Toasted sweetened coconut, for garnish

DIRECTIONS:

Fill the blender with 1/3 of the rum, pineapple, agave nectar, coconut cream, lime juice, and ice.

Set aside. Repeat two more times, first adding strawberry, and then peach.

Blend mixture and pour into serving glass in layers starting with base mix, then strawberry mix, and lastly peach. Make sure to chill each layer before adding the next.

The Slightly Sloshed Slushy

Frozen fruit martinis, yes please! This frozen pear martini from Countryliving.com is sure to get a weekend started on the right foot.

INGREDIENTS:

  • 1 1/2 oz. pear vodka
  • 1 1/2 oz. squeezable fruit puree or jarred baby food (pears, plums, apricots, anything)
  • 1/4 c. 7-UP
  • Juice of half a lemon

 DIRECTIONS:

Combine everything in a blender with a few cubes of ice. Blend on high for 10 seconds. Pour into a martini glass.

Frozen Peach Champagne Cocktail

Easy peasy and peachy! This fizzy cocktail from spendwithpennies.com only takes five minutes to make and is sure to be a crowd pleaser.

Ingredients

  • 4 ounces Alizé Peach
  • 2 cups frozen peach slices
  • 3 tablespoons powdered sugar
  • 1 cup ice
  • 12 ounces chilled champagne or sparkling wine
  • 2 tablespoons grenadine

Instructions

Combine Alizé Peach, frozen peaches, powdered sugar and ice in a blender. Blend until smooth adding some of the champagne if extra liquid is needed.

Stir in remaining champagne.

Place ¼ of the peach mixture in each glass. Add 1 tablespoon grenadine to each glass. Top with remaining peach mixture.

Garnish and serve.

Bourbon Peach Slush

You really can not have too many peachy things during peach season, especially in New Jersey. With fresh made peach simple syrup and your favorite bourbon, this summertime favorite from thespeckeledpalate.com is a winner.

Peach Simple Syrup

  • ½ cup granulated sugar
  • ½ cup water
  • 2 peaches, sliced

Bourbon Slush

  • Peach Simple Syrup, recipe above
  • 2 cups ice cubes
  • ½ cup bourbon

Instructions

In a small saucepan, combine the water, sugar and peaches to make the simple syrup. Bring to a boil over medium-high heat, and simmer for an additional 5 minutes.

Remove from the heat, and steep for 15 minutes, then refrigerate until use.

Pour the peach simple syrup (with the peach slices, too!), the bourbon and ice cubes into the blender.

Blend until smooth.

Serve immediately, and enjoy with a slice or two of fresh peach on the side!

Frosé Ice Pops

Rosé, popsicles, and summer? Say no more. These are a delicious summer treat from epicurious.com that can be made up to three months in advance.

Ingredients:

  • 6 ounces strawberries, hulled (about 1 1/2 cups)
  • 2 ounces fresh raspberries (about 1/3 cup)
  • 1 2/3 cups dry rosé (about half of a 750 ml bottle)
  • 1/2 cup ruby red grapefruit juice, preferably fresh
  • 2 tablespoons sugar
  • 1 cup whole or sliced fresh strawberries and raspberries

Special Equipment

10 (2.5-ounce) freezer ice-pop molds and sticks

PREPARATION:

Purée strawberries, raspberries, rosé, grapefruit juice, and sugar on high speed in a blender until smooth. Strain through a fine-mesh sieve into a large measuring cup; discard seeds and foam.

Divide strawberry mixture among ice-pop molds, leaving about 1″ space at the top. Freeze until slushy, about 1 hour. Stir with an ice-pop stick, then add fresh berries, stirring to incorporate with the stick.

Cover molds, insert sticks, and freeze until ice pops are solid, at least 4 hours.
