Corn is rich in vitamin C . Vitamin C is an antioxidant that protects your cells from damage and helps to fight off diseases such as heart disease and cancer.

Yellow corn is a great source of the carotenoids Lutein and Zeaxanthin which support eye health and prevent the lens damage that leads to cataracts. Corn contains vitamins A, C, K, E, B2, B5 also choline, and fiber. It also has lots of essential minerals like zinc, magnesium, iron, and manganese.

It’s important to eat corn in moderation and keep a well-balanced diet, eating about 3-5 cups of veggies each day. Corn is rich in sugar and fructose which does contribute to visceral fat.

Corn is a carbohydrate. It does contain some protein and potassium and is low in sodium.

Corn is healthiest when it is eaten as close to its natural growing form as possible, either on the cob, as cooked kernels, or freshly milled.

Grilled Corn With
Lime Butter

Ingredients

  • 1 1/2 Tbsp. Lite butter, melted
  • 1/4 Tsp. grated lime rind
  • 1 1/2 Tbsp. fresh lime juice
  • 1/4 Tsp. Salt
  • 1/4 Tsp. Ground black pepper
  • 8 ears shucked corn

Grated Parmesan to taste

Directions

Prepare grill or broiler. Combine butter, rind, juice, salt, and pepper in a small bowl. Place corn on a grill rack or broiler pan coated with cooking spray. Cook for 10 minutes, turning frequently. Remove from heat and brush corn with butter mixture.
