I don’t know about you, but summer can be a time when I just don’t have an appetite! The heat robs us of the desire to eat the healthy foods that make our bodies tick. We tend to skip a meal just to find ourselves overeating later— especially in the evening hours when our bodies need to rest and take a break .
Eating light and nutritious food is key to beating the summer heat. Including fresh lettuces and fruits that contain lots of essential water helps us to stay hydrated and keep our skin vibrant and glowing.

Baby Spinach Salad with Strawberry and Toasted Almonds
Ingredients
1/3 cup almonds , slithered
4 cups organic baby spinach
3/4 cup organic ripe strawberries, quartered
1 tsp. Sherry vinegar
1 tsp. Dijon mustard
3 tbsp. Extra virgin olive oil
Salt pepper to taste
Place the almonds in a dry skillet or sauté pan. Cook over low heat, shaking the pan the entire time until the almonds are toasted. The almonds are done when you start to smell their “ toasty“ scent. Remove the almonds from the pan and cool. Wash and dry the spinach. Prepare the dressing by placing the vinegar and mustard in a mixing bowl.
Slowly whisk in the oil until all is incorporated. Place the spinach in a large bowl. Add the strawberries, almonds and dressing. Toss to coat. If desired, season with a pinch of salt and pepper. Enjoy!
