Staying on a healthy nutritional plan takes time and thought . Planning and organizing your meals is crucial for reaching your weight loss goals and long term success. I often hear my clients say, “ I’m sick of chicken!” The reality of it is they aren’t sick of chicken, just the way it’s being prepared. Same old same old gets boring and causes so many to go off their program looking for some way to lose the weight yet experience meals with full and interesting flavor .

VERY LEMON CHICKEN
Ingredients
Use organic ingredients when available
- 1/2 chicken breasts skinned fat removed ( May substitute chicken thighs )
- 1/2 cup fresh squeezed lemon juice
- 2Tbsp. White wine vinegar
- 1/2 cup fresh sliced lemon peel
- 3 tsp. Chopped fresh oregano or 1 tsp. Dried oregano crushed
- 1 medium Onion ,sliced
- 1/4 tsp sea salt
- 1/2 tsp. Paprika
- Black pepper to taste
Place chicken in a 13x9x2 inch glass baking dish. Mix lemon juice, vinegar, lemon peel, oregano and onions. Pour over chicken and marinate in the refrigerator for several hours or overnight, turning occasionally. Sprinkle with salt, pepper and paprika. Cover and bake at 325 F for 30 minutes or more until done.
